Pepper smells dry, sharp, warm and slightly woody, bringing the nose-tickling liveliness and faintly citrusy sparkle of freshly ground peppercorns into a fragrance. When the type is not specified in a note list, it usually refers to black pepper or a pepper accord.

Natural pepper oils are obtained by steam distillation or CO2 extraction of the berries, and white or pink pepper each add their own nuances.
