Perfumery uses mainly peppermint, Mentha piperita, and spearmint, Mentha spicata, with the United States and India as major producers.

The oil is obtained by steam distillation of the leaves. Peppermint is more mentholated and cooling, while spearmint is sweeter and softer. Mint mostly sits among the top notes, sometimes in the heart. It pairs well with lemon, bergamot, lavender, basil, grapefruit, vetiver, chocolate and musk.
