Sage smells dry, herbal, slightly camphorous and aromatic, a clean scent that brings together sun-warmed Mediterranean herbs with hints of eucalyptus and wood. It comes from the leaves of Salvia officinalis, grown in the Balkans and around the Mediterranean, including Turkey.

The oil is obtained by steam distillation of the leaves. It is sharper and more camphorous than clary sage. Sage mostly sits in the heart, sometimes in the opening. It pairs well with lavender, rosemary, bergamot, grapefruit, cedar, vetiver and sea notes, and it is common in aromatic and fougère fragrances.
