Lime smells sharp, sour, green and slightly sweet, a citrus greener, juicier and more tropical than lemon that recalls a fresh wedge of lime in a cocktail glass. It comes from the fruit of Citrus aurantiifolia and related lime species, with Mexico and Peru among the main producers.
