Cognac smells warm and boozy with dried fruit, caramel and light oak nuances, the scent of grape brandy aged in barrels, giving a fragrance a mature, indulgent depth.

Perfumers have a material called cognac oil, distilled from wine lees, which smells green, oily and fruity; the cognac note itself is usually an accord built from this oil, esters and vanillic materials.
