Cinnamon smells warm, sweet, slightly bitter and woody, a dense spice that recalls freshly baked cinnamon buns and hot winter drinks. It comes from the bark and leaves of Cinnamomum trees, with Sri Lanka the best-known source.

The oil is steam-distilled from bark or leaves; bark oil is sweeter, while leaf oil leans closer to clove. Its use in perfumery is limited by international standards. Cinnamon mostly sits in the heart, sometimes in the opening. It pairs well with orange, vanilla, amber, clove, tobacco, apple and rose, and it is a classic part of warm, spicy compositions.
