Coumarin smells sweet, warm and slightly vanilla-like with a powdery, almond and hay character, recalling freshly dried grass and tonka beans; it is a key molecule in perfumery.
Coumarin occurs naturally in tonka beans, hay and sweet clover. It was first synthesised in the nineteenth century, making it one of the earliest synthetics used in perfumery, and today it is mostly produced synthetically. It is a cornerstone of the fougère family. Coumarin sits in the base and heart of a fragrance. It pairs with lavender, tonka, vanilla, oakmoss, tobacco and musks.
