Two species matter in perfumery: Roman chamomile, Chamaemelum nobile, and German chamomile, Matricaria chamomilla. The flowers are steam-distilled into essential oils, the German one turning blue because of chamazulene. The scent evokes infusion, dry hay and honey. Chamomile sits mainly in the heart of a fragrance and often in the opening. It pairs with lavender, honey, tobacco, hay, immortelle and vanilla.
