Cacao smells dry, bitter and dusty, with an earthy, roasted depth: less sugary than chocolate and more refined, closer to pure cocoa powder.

Fermented and roasted beans of Theobroma cacao are solvent- or CO2-extracted to give a cacao absolute, often supported by synthetic pyrazines and vanillin. The scent hints at cocoa powder, a little coffee and a woody bitterness. Cacao usually sits in the heart and frequently extends into the base. It pairs especially well with patchouli, which shares its earthy darkness, and with vanilla, tonka, oud, rose and tobacco.
